We want to keep the wine alive, without it being damaged, with the aim of reaching a harmonious balance that turns Ondalán wines into a unique sensation.
The production of our wines starts with the selection of the grape and varietal. During the production process, Bodegas Ondalán combines the latest technology with traditional practices.
We carry out longer fermentations, maceration with the skins to extract the best compounds (colour, tannins and aromas) that give the wine its varietal identity. We use cement stores after the fermentation to facilitate the natural decanting of the wines and preserve a cool temperature with the least thermal variations.
Each year, our wines are aged in barrels made from the finest wood of the best French and American oak. We never use an aggressive process for stabilisation or filtration. We want to keep the wine alive, without it being damaged, with the aim of reaching a harmonious balance that turns Ondalán wines into a unique sensation: “a special wine, designed for people who want to distinguish themselves with something special, unique and perfect: a rounded wine.”
